Soup Season: Ina's Easy Tomato Soup

One of our favorite recipes to make as the temperature begins to drop is Ina Garten's Easy Tomato Soup & Grilled Cheese Croutons. With two working parents and two young kids, any recipe with the word "easy" in the title is a winner in our house. What I love most about the Barefoot Contessa is how direct she is. In many of her recipes (this one included) she urges you to use "good" ingredients, like "good olive oil." This may sound like obvious advice, but I feel like this can be easily overlooked in a shopping environment where we are overwhelmed with options. Sometimes the most delicious recipes, are the most simple; as long as they are made with "good" ingredients.


What really sold me on this recipe was the grilled cheese croutons. A "good" grilled cheese, happens to be one of my (few) specialities, so this is also a recipe I can help contribute on. I was known to run a grilled cheese assembly line late night in our apartment in college. I prefer to dip my triangle halves into my soup rather than the crouton approach, but you can't go wrong either way and there really is nothing better.


We used two of our favorite kitchen items for this recipe: a Boos Cutting Board and a Le Creuset Dutch Oven. These are definitely two registry must haves!
