Crowd Pleaser: Buffalo Chicken Wontons

After the success of the buffalo chicken Irish nachos a few weeks back, we decided to make wontons for the Super Bowl. The original plan was to make egg rolls, but the wonton wrappers in the store had a later "sell by" date and I am a little neurotic about food freshness so the wontons prevailed! I also like that you can have one wonton (or a few depending on how hungry you are) and not be too full but one egg roll can set you back. For an event like a Super Bowl party, belly real estate is crucial for copious food and drinks, so finger foods are definitely the way to go in my opinion. We ended up baking these because the kitchen was busy and there really wasn't enough time or focus for frying, but you can really do either!

Higginspired Buffalo Chicken Wontons

Ingredients:

  • 1 lb chicken breasts (shredded)

  • 1 cup of Frank's Red Hot Buffalo Sauce

  • 1/2 stick of butter

  • 2 oz bleu cheese crumbles

  • 1 pack of wonton wrappers (Nasoya is the brand I used and they were fresh in the refrigerated section by produce)

  • Pam cooking spray

  • Blue cheese dressing to serve on the side

  1. Bake chicken breasts (olive oil, salt and pepper) in a 350 degree oven for 35 mins (until internal temp is 165 degrees).

  2. Let chicken rest for 15 mins and then shred.

  3. Add butter to a large sautée pan over medium heat. Melt better and add the hot sauce.

  4. Toss the chicken in to coat it. Once the chicken is coated remove from heat and let rest.

  5. Setup a wonton wrapping station. I would suggest a cutting board to wrap, a small bowl of water to seal (you can also use egg wash) and a Pam sprayed cookie sheet.

  6. Fill each wonton wrapper with approx a tbsp of chicken mix and blue cheese crumbles (tip: you want to leave about 1/2" border of the wrapper around the mix in the middle - DO NOT OVERSTUFF. If you caught our Instagram Live video, this was Sam's downfall)

  7. Brush the perimeter of the wonton wrapper with water. I used my finger but you can also use a small kitchen brush if you have one.

  8. Fold wonton in half to make a triangle and press down firmly to seal. Add water to the bottom two corners and fold in half again, pressing firmly to seal again. You can watch a YouTube video of how to do this - my method is #3 in this video.

  9. Spray wontons with Pam cookings spray

  10. Bake in oven at 350 degrees for 25min or until the wontons are golden brown. Remove from oven and serve with bleu cheese dressing.

Enjoy!!
