Buffalo Chicken - 15 Ways
We hosted some neighbors for the playoff football games yesterday and were inspired to make something new! With buffalo chicken on the brain, but underwhelmed by the traditional dip we would normally serve, I hit up Instagram for some ideas and the results were so creative and mouth-watering to say the least. I compiled a number of the suggestions here to share with you. This list basically combines my love of buffalo chicken with all of my favorite food groups - Pizza, Tacos and Mac and Cheese to name a few. I hope you enjoy these recipes as much as I enjoyed receiving them! The first one is Sam's take on traditional chicken nachos...

Higginspired Buffalo Chicken Nachos
Ingredients:
2 lbs chicken breasts (shredded)
1.5 cups of Frank's Red Hot Buffalo Sauce
1 stick of butter
1 bag of shredded cheddar cheese
4 oz bleu cheese crumbles
1.5 bags of frozen waffle fries
chopped scallions
crumbled bacon bits
diced jalapeños
bleu cheese dressing and frank's red hot for drizzling over finished nachos
Bake chicken breasts (olive oil, salt and pepper) in a 350 degree oven for 35 mins (until internal temp is 165 degrees). Let rest for 15 mins and then shred. Turn oven to 450 degrees and cook the waffle fries for 30 mins until crispy Add butter to a large sautée pan over medium heat. Melt better and add the hot sauce. Toss the chicken in to coat it. Once the chicken is coated remove from heat and let rest. When fries are done cover them with the chicken. Top the chicken with the cheeses (bleu and cheddar) and other toppings (scallions, jalapeños and bacon). Lower oven heat to 350 and bake for 5 mins until the cheese is melted and bubbly. Remove from oven and drizzle with bleu cheese dressing and additional hot sauce. Enjoy with a cold beverage of your choice!
